The philosophy of the market was to create a space for people who are un-certified (and therefore don't have other options to sell their wares). We like to stay true to this, and although the occasional certified vendor will got in (because they make something too delicious to pass up), basically we liked to take people who make their goods at home, and are just trying to get off the ground.
The hope was that the market was a kind of incubator, helping people raise capital as well as gain support, and that after a couple markets we can set them free to participate in the more legit side of the food world.
Sample day was held once a month. Vendors brought 2 servings of their dish, in the packaging you would use for the market, and contact info as well as the prices you would charge.
